What the roaster says

Finca El Paraiso — ‘Paradise’ in English — is the estate of first-generation producer Hipolito Acuna and his wife, Nari, in Nicaragua’s highlands. Surrounded by pine-shaded coffee trees and native flora, the farm reflects their deep respect for the land and careful cultivation practices, creating a place that truly lives up to its name. This CM Natural Jasper lot features Java cherries harvested at peak ripeness (90–95%), then fermented whole in oxygen-free tanks at the Brodahu mill under controlled conditions. After fermentation, the cherries are slow-dried on shaded, multi-tiered beds to 10–12% moisture and rested in cherry pod before milling. The cup is long and structured, with dense sweetness and refined texture — an expressive, meticulously crafted profile shaped by both environment and precision processing.
